Today I Simply Enjoyed Spending Time with My Babies.

It was a good day, though it did start out a little bit confusing.  I was still asleep when Tony came into my room at 8am and kissed me good-bye.  I vaguely remember that.  When I woke up around 45 minutes later I had completely forgotten everything except him kissing me and I thought he was still at home.  So, the sounds of Ash and Britt running around the house didn't concern me at all.  After all, Tony was baby-sitting, right?  I let myself gradually wake up over the next 15 minutes before going downstairs, where I was greeted by two very rambunctious and completely unattended little girls!  We are very lucky that they were good and didn't do anything naughty.  And it's a good thing that Tony locked the door behind him too!  I guess he'd gone into the girls' room and told Ash to go potty and then go back to her room to play while I slept and got Britt out of her crib to play as well.  I told him to please not leave until I'm fully awake ever again.  Now that the kids' bedroom door isn't right next to ours, Ash likes to try to sneak out in the early morning.

Later on we had some fun making flatbread.  Ash really got into the kneading part.  I used it to make pizza.  A really fresh pizza!  I tweaked the flatbread/focaccia recipe by not adding thyme (I didn't have any) or any cheese.  I used fresh basil instead of dry to use it up.  I also put in about 2/3s white wheat and 1/3 whole wheat.  I'm trying to get my husband gradually used to the taste of whole wheat.  For the pizza part, I really took creative license.  I'd say I pretty much made up my own recipe and I'd bet it tastes better than the original recipe (from Better Homes and Gardens), which you probably can't even see unless you are a subscriber.  The original called for onions (yuck), beer (yuck, yuck, yuck!), cream cheese (trying to avoid cow milk), cayenne pepper (don't have any), pre-packaged flatbread (better and cheaper to make your own), and grilling (we only have a counter-top grill).

So here's my version.  I'm calling it Flatbread Bacon & Arugula Pizza.  If you aren't one of those who likes to cook with your electronics in the kitchen or like to write recipes down by hand, I'm sorry that you can't copy and paste on my blog.  Let me know if you'd like me to email a copy to you.

Flatbread Bacon & Arugula Pizza.

1 Tbsp. olive oil
4 oz garlic & herb goat cheese
1/8 cup water
2 tsp. Worcestershire sauce
Pinch of black pepper
Dash of onion salt
Flatbread (I recommend the recipe I linked to above (it filled a whole cookie sheet)
1 cup baby arugula
1 cup cherry tomatoes, halved
6 slices crisp-cooked bacon, crumbled

1.  Bake your flatbread. 
2.  In a bowl whisk together goat cheese, enough water to make a thick liquid or watery paste, Worcestershire sauce, and pepper until smooth-ish.  Throw in a bit of onion salt, if you like.
3.  Spread this cheese mixture onto the flatbread.  Top with arugula, tomatoes, and bacon.  Broil on low for a bit (just to warm up the toppings a bit).
4.  Eat!

Elle has really been changing a lot in the past 3 days.  She's grabbing the hanging toys on her kick and play mat and moves herself around.  No more unsupervised sleeping on my bed for her!  She also speaks.  I've uploaded a video so you can get all gushy in your heart parts too.  You're welcome.  :)



Can you believe that she's going to be 3 months next week?!?!?  Yeah, me either.

Love the recipe, well yours anyway. I can't believe it called for beer, and onions, gross. I think I may have to try that one, minus the bacon, I don't eat meat.
I can't believe Elle will be 3 months already.

'who is a cutiest of them all?' She is too cute in that video. And looks way too advanced for an 'almost 3 months' :D

And for the pizza, mmmmmmmmm

My baby Irma just discovered cherry tomatoes. And she loves them. She loves them so much,that a couple of days ago I was changing her diaper with her holding a cherry tomato. Third one in a row.

That pizza sounds great! I just made a greek pizza a few weeks ago. It was all from scratch to. I want some again NOW! It was so much healthier.

Why do husbands not like wheat flour? My husband is the same way. Silly! Sometimes I tell him, "Suck it up! It's healthier!" :)
